How to Make These Chocolate Banana Popsicles

These babies come together in a flash and are a great, healthy option for those with kids! All you need is a good blender, your typical measuring cups and spoons, and some popsicle molds and sticks!

Let’s break down the super easy process:

  1. Place all of your ingredients together in a blender.
  2. Then, blend until completely smooth.
  3. Pour into your popsicle molds and insert your popsicle sticks (I used a mini mold, so I got 8 mini popsicles. With a larger mold, I’d expect about 4).
  4. Next, let freeze for 3-4 hours or up to overnight (what I did).
  5. Finally, once fully frozen, drizzle with some melted chocolate, top with chocolate shavings, or just enjoy as-is!

Materials You’ll Need:

  • Blender
  • Measuring cups and spoons
  • Popsicle mold and sticks
  • Something to drizzle and shave chocolate overtop (optional)

Lifeway’s Plain Whole Milk Kefir

I honestly love just to drink Lifeway’s whole milk kefir as an afternoon pick-me-up! It’s so delish and packed with protein, calcium, and probiotics. Plus, it’s 99% lactose-free, gluten-free, and has no added sugar!

Plus, it’s great for baking too outside of these chocolate banana popsicles! You could easily use it in your loafs, cakes, and cupcakes as well.

Description

Easy, 5-ingredient and kefir-packed chocolate banana popsicles!

Ingredients

Units Scale
  • 1 cup Plain Whole Milk Kefir (from Lifeway Kefir)
  • 2 tablespoons unsweetened cocoa powder
  • 3 tablespoons honey
  • 1 teaspoon pure vanilla extract
  • 1 large ripe banana, cut into smaller pieces
  • Optional: extra chocolate to melt/drizzle overtop + pre-shaved cacao nibs

Instructions

  1. Place all of your ingredients into a blender and blend until smooth.
  2. Pour the mixture into your popsicle molds and insert your popsicle sticks (I made 8 mini popsicles with the mold I had, so if you’re using a larger mold it may only give you about 4).
  3. Freeze for at least 3-4 hours or overnight. Once fully frozen, remove from the molds, drizzle with a bit of melted chocolate and top with pre-shaved cacao nibs (optional, but delish). Enjoy!

Notes

  • I used chocolate melts to drizzle and pre-shaved cacao nibs to top my popsicles with! You could easily dip these fully in chocolate, drizzle with caramel, or even enjoy as-is. No matter which way you decide to go you won’t be disappointed!
  • Definitely give these at least 3-4 hours to fully freeze or they’ll still be soft to touch. I let mine freeze overnight for that perfect popsicle bite!
  • Don’t skip out on the Lifeway Kefir! It’s packed with protein and probiotics, making these popsicles one healthy little treat. Great to make for those with kiddos!

  • A strawberry almond cake brushed with a strawberry simple syrup and topped with yes, even more strawberry in the buttercream (+ some pistachios)! 🍓 Swipe for videos from the process too!

Finally pulled my last two brain cells together long enough to share this one, lol. But I will say, I was really happy with how this one turned out—the strawberry syrup really soaked in and this thing was moist with a capital M (sorry for using the m word but it’s TRUE).

While there might be a lot of strawberry, it wasn’t overpowering. The almond flour helped to cut through the sweetness and the pistachios added a little salty moment.

Adapted this one from an older recipe of mine and it’s nice to know it still holds up! Anyone else baking some good stuff lately?

  • Some buttery soft and toasted coconut shortbread from last weekend with our bffs for a friend’s sprinkle! ✨

A few of us brought an assortment of shortbread to share after dinner (the others being citrus and rosemary) and I forgot how comforting of a sweet treat it is.

It’s just one of those biscuit recipes that is so simple, yet offers endless variations and arguably plenty of room for error. Adding more shortbread to my list of near-future needs! 🤌🏻

  • Jam & Buttered Toast Cookies, recipe via @lungisalwaysbaking // When you thought you’d seen it all and then a cookie rocks you to your core. 🔥

Toasted sourdough slathered with jam and butter that’s then blitzed into pieces and mixed into a brown butter/white miso dough, marbled with extra jam and rolled in more toasty bits. Crispy edges, gooey middles.

The original calls for white chocolate, but I only had dark on hand (a mix of chunks from a bar and @guittardchocolate wafers)—next time I’ll prepare more because I love a good white choc + raspberry combo!

Truly run, don’t walk to make these! And I know I said it already, but @lungisalwaysbaking—may you always find a parking spot close to the entrance. 😭
