Sugar-Free Glaze with Confectioners Sweetener

A simple sugar-free confectioners sweetener glaze for your next batch of pastries or other sweet treats! Comes together in just 5 minutes. I partnered up with Purecane for this recipe (more on them below)—let’s bake, friends.

Some Materials You’ll Need:

  • Medium-sized mixing bowl
  • Spatula
  • Sifter
  • Measuring cups and spoons

What can you glaze with this?

This sugar-free glaze is perfect to spoon over pastries! For this recipe, I whipped up a small batch of mini-pop tarts (or pocket pies, as I like to call them). Once I made the glaze, I divided it up into some smaller bowls and used food coloring to glaze each pop tart with a different color.

You could even drizzle this over your favorite loaf recipe or over some cupcakes!

With this being a sugar-free glaze, it may not lay or handle like one with regular powdered/confectioners sugar, so that’s something to keep in mind. You might just need to nudge it a bit more or pipe on with a piping bag. If you don’t have a piping bag, you can use a ziplock bag and cut the tip of one of the corners off—should work just fine!

How to Make This Sugar-Free Glaze

This is probably one of the easiest things in the world to make—trust me. All you need are a few ingredients and it comes together in 5 minutes (or less). Let’s break it down:

  1. Sift your confectioners sweetener into a medium-sized bowl.
  2. Add about 3-4 tablespoons of whole milk, mixing together with the sweetener using a spatula (I find it’s much easier to mix with a spatula first and then switch to a whisk once it’s thinned out).
  3. Then, just keep adding more whole milk by the tablespoon until you’ve reached a consistency you’re happy with (8 was perfect for me) and then whisk in your vanilla extract if using.
  4. You can drizzle or spoon the sugar-free glaze as-is, or whisk in some food coloring. You can even add a tablespoon of your favorite jam (blueberry, strawberry, etc.) for some added flavor!

If your glaze feels too thick, just add more whole milk by the tablespoon until it’s just right. Go a little overboard and now it’s too thin? Just sift in some more confectioners sweetener until it’s the right thickness.

Sugar-Free Confectioners Sweetener from Purecane

Description

A simple confectioners sweetener glaze for your next batch of pastries or other sweet treats! Comes together in just 5 minutes with plenty of ways to customize.


Ingredients

Scale
  • 3 cups confectioners sweetener from Purecane, sifted (~300g)
  • 7–8 tablespoons whole milk
  • 1/2 teaspoon pure vanilla extract (optional)
  • Food coloring, Jam, Sprinkles (optional)

Instructions

  1. Sift your confectioners sweetener into a medium-sized bowl.
  2. Start by adding 3-4 tablespoons of whole milk, mixing together with a spatula or whisk until incorporated. Then add more whole milk by the tablespoon until desired consistency and no clumps remain (8 tablespoons was perfect for me). Whisk in your vanilla extract if using for added flavor.
  3. You can either spoon or drizzle over your pastries/desserts as-is or add some food coloring! You can even whisk in a tablespoon or two of your favorite jam. The glaze will harden and set overtime, so if adding sprinkles, make sure to do so right after glazing.

Notes

  • Use same-day as the glaze will set with time (and will harden more on your pastries/dessert overtime).
  • If you want a thinner glaze, add more whole milk. Thicker? Sift in some extra confectioners sweetener!
  • This glaze is great because you can divide up into a little bowls and different food coloring to each (like I did for these pop tarts) or even whisk in some of your favorite jam. It’s totally up to you!
  • If you’re not using Purecane’s Confectioners Sweetener, your glaze will obviously not be sugar-free and you may need to use less whole milk than listed. Start with 3-4 tablespoons and work up from there!

  • My first galette des rois of the year! 🫶🏻 This will always be my favorite pastry to bake and eat. Silky almond cream tucked inside some flaky puff pastry (in this case rough puff)—I mean what’s not to love?

Galette des rois is a French pastry that makes a big appearance in January, specifically January 6th to celebrate the Epiphany (a religiously-tied feast day).

Traditionally you’d hide a small fève (typically a small porcelain charm of some sort) inside the almond cream to make for a fun surprise when serving up pieces. In place of a charm, you can also just use an almond!

Here I followed @emcdowell’s rough puff pastry recipe and @davidlebovitz’s almond cream filling! ❤️ Definitely give this one all try if you never have or get your hands on one at the bakery. They’re the best!

Again, I’m a vegetarian so I made this one with a red bean/oatmeal mixture that is honestly not terrible on its own, but with hard boiled eggs?? No thank you?

WHERE THINGS WENT WRONG
- The invention of this recipe in the first place, lol.
- The filing ended up tasting a little dry and in hindsight would up the seasonings too!

WHERE THINGS WENT RIGHT
- I mean we nailed the hot water crust pastry? 💅 I’ve never made it before so the process for that was wild, but it turned out golden and cute I thought!
- The eggs (*gags*) to filling ratio worked out well.
- Technically it looks how it should and I feel confident in my placing with top marks on this one! Paul Hollywood, thoughts?

Onto the next bake ASAP so that I don’t have to think about this one anymore, kthx! And if it sounds or looks tasty to you, then more for you! *passes the fork*

  • This Bake Off technical was a fun one for me! Got to make some pastry, a little jam, dabble with chocolate—what’s not to love? 🫶🏻 Swipe through a bit more videos from the process and closeups of this white chocolate and mixed berry tart!

WHERE THINGS WENT WRONG
- My white chocolate ganache either set too long or was too cold? The texture was a bit rubbery, but at least it still tasted good!
- I didn’t add any chocolate decorations on top because I panicked, lol. It just looked so neat and clean I was afraid to go too far and ruin it!

WHERE THINGS WENT RIGHT:
- Quite possibly the best pâte sucrée (sweet shortcrust pastry) I’ve ever made. It just all came together, rolled super thin, but still held firm and was perfectly golden. Proud of myself for that one!
- The mixed berry jam layer (blackberries, blueberries, raspberries) was a delight too and gorgeous to look at. It paired well with the white chocolate!
- I think she looks cute and professional, okay?? 

Now onto the next technical challenge which is a gala pie and might end me—meat and hard boiled eggs?? 🤢 SOS, wish me luck (and send me veggie gala pie recc’s please)!
